Montcalm Mayfair

Each year, Chelsea Flower Show signals the arrival of summer in London — a moment when the city shifts into light, colour and seasonal expression.

At Montcalm Mayfair, this moment marks the launch of Into the Garden — a signature afternoon tea served at Lilli by Akira Back, introduced during Chelsea Flower Show season and continuing throughout the year.

Part of Montcalm Mayfair’s Autograph Moment, The Garden, the experience is inspired by Georgian garden heritage and the idea of nature as cultural expression.

At its heart is Constance Spry, one of the most influential figures in British floral design and hospitality, whose collaboration with Rosemary Hume led to the creation of Coronation Chicken, first served at the 1953 Coronation luncheon for Queen Elizabeth II.

This legacy of creativity, invention and hospitality continues to shape the experience today.

Inspiration

Constance Spry & British Floral Heritage

The experience is inspired by Constance Spry, a pioneering floral designer whose work redefined British hospitality and design language in the 20th century.

Her collaboration with Rosemary Hume led to the creation of Coronation Chicken for the 1953 Coronation luncheon for Queen Elizabeth II — a defining moment in modern British culinary history.

Her approach to floristry — expressive, natural and unconstrained — continues to influence the creative direction of Into the Garden.
